Steaks in this category come in 3 pound groupings. We do our best to describe each cut and how to best cook that particular cut but realize that there are many opinions out there, for example whether to sear initially to "seal in" the moisture or whether to reverse sear a steak by cooking it slowly at first and then finishing it with a sear.
